Game Night Recipe: Hot Open Faced Sandwiches

Ladies football season is here and there is nothing we can do about it, especially if your man is a football fan!

So instead of being passive aggressive when game time comes and if you don't want him
over someone else's home all the time, here's how to host Sport Night:

1. Most men love sandwiches, so instead of ordering a foot long from the deli, here's my take:

Hot Open Faced Sandwiches:
1. Sausage and Peppers
2. Roast Beef and Swiss Au Ju
3. Eggplant and Roasted Peppers
4. Classic Cuban

If you have ten men coming over, then prepare three sandwiches each, so that they can eat during the game, cut them in half for half- time and send each guy home with one sandwich. Men will love it and you will score major with your hubby.

Here are the easy ways that you make the sandwich's from Friday.
Friday Buy the Meats and Marinade
1. Marinade a lean cut of Roast Beef with Black Pepper, Garlic and Thyme.
2. Marinade a boneless cut of Pork Shoulder with 15 cloves of garlic, cilantro, and fresh store bought chipotle salsa.
3. Buy classic Italian sausage, rinse, cover and put in a baking pan.
4. Buy classic Marinara sauce and 1 lb. of provolone cheese.

Friday:
1. Chop up four Onions, four Bell Peppers- sauté in garlic and olive oil.
2. Chop up 1lb of mushrooms- sauté in olive oil and thyme.
3. Slice length wise red bell peppers sprinkle a little chipotle powder on them and broil in the oven til blistered.

Saturday:
After Breakfast put all the meats in the oven at 350 degrees, get those going while you clean and send hubby for snacks for his friends.
After 3 hours of slow roasting the meats take them out still covered and let them rest and cool before putting them in the fridge.

Sunday:
Game Day:
When the "guys" arrive put out the snacks, let your hubby and friends have their moments. Defrost the meats, take the Club Rolls and split them in have brush them with olive oil and toast them in the oven at 350 degrees.
1. Italian Sausage Sandwich-
Take 1/4 cup of the onions and peppers and put it in tomato sauce with oregano, and put it on the club in fifteen minutes with the Sausages and provolone cheese, when you crisp the bread first, it will not be soggy when you add the sauce.
2. Roast Beef-
Toast the bread first with olive oil and slice the beef with the mushrooms and au ju and top with Swiss cheese, toast till cheese is bubbly and brown.
3. Eggplant and Roasted Peppers:
You want to grill the eggplant that day with oregano and instead of any sauce add pesto then the roasted red peppers and provolone. Bake till cheese is bubbly
4. Cuban:
Same prep with the toasting, but add deli ham with the roasted pork and gravy from the roasted pork along with sweet relish, instead of dill pickles, top with provolone. Again bake till cheese is bubbly.

Bake sandwich's all at once, serve half of the sandwiches hot, the rest of the sandwich you can cut in half, if they get hungry again or simply give as a parting gift for lunch the next day.

With the left over meats- freeze them for the week's dinner. Save money buy meats from Wal-Mart- I know, but they actually have a great selection of fresh quality meats, be mindful of expiration dates.

1. You have gourmet sandwich's that your husbands friends love, scored big points with hubby.
2. You have dinner for the entire week, veggies included from the eggplant and roasted peppers.
3. You saved at least 75.00 instead of processed wings and pizza.
