End of Summer Soiree Menu

So, as the middle of August approaches so does the last of the summer soirees.

People begin to head back out work and school, but you too can say bon voyage to summer in style.

Things to get:

12 Mason Jars with Handles
12 Ramekins
Place cards
Flowers--Sunflowers and Daisy Mix
China
Linens- End of Summer Colors anything Al Fresco

Menu:

Main Menu:
Rosemary and Olive Oil Baked Chicken:
3 Organic Chicken Cut- Up washed in lemon and vinegar
3 cloves of Garlic
1/2 teaspoon of Paprika
1 Tablespoon of Turmeric
1/4 teaspoon of Sea Salt
6 Sprigs of Fresh Rosemary
Directions:
When Chicken is all cut- up and washed, season with the above ingredients
Bake chicken in a non aluminum pan and coat chicken with good quality Extra Virgin Olive Oil.
Bake chicken at 350 for 25 min, til crispy.

Salmon Sliders
I know you see them in the grocery store but my recipe is truly a delicious.
3 lbs. of Wild Caught Alaskan Salmon fillets
3 cloves of Garlic
1 Tablespoon of Paprika
1 green bell pepper
1 red bell pepper
3 eggs
1/2 cup of Italian Bread Crumbs divided into 2 parts
Directions:
1. Clean and take off skin off filets
2. Bake salmon with sea salt, lemon juice for 15 min, til flaky
3. In a sauté pan with olive oil put garlic, diced red and green bell peppers, and 1 diced Onion, till veggies are translucent.
4. When salmon is done allow to cool and flake
5. Put cooled veggies and flaked salmon in a blender with the eggs and bread crumbs.
Pulse twice, just to get a consistency of meatloaf.
Take ice- scooper and scoop salmon mixture into remaining breadcrumbs and put on a olive oiled pan
makes about 24 sliders.
Mix: dill relish, greek yogurt, and lemon serve sliders on a bed of lettuce.

Corn Salad:
5 ears of Corn- Shucked
1 bell pepper- red
3 cloves of garlic
2 sprigs of Thyme
3 Green Onions sliced
1/4 of low salt ha- diced
1/4 lb. of pepper jack cheese

Dice all of ingredients and mix them together, until blended well and serve with lime on a corn tortilla.

Heirloom Tomato's
Heirloom Tomato's are great with a little sea salt, great with this meal.

Dessert:
Mini- Brownie Pies
Take Brownie Mix and pour batter into lightly oiled ramekins.
Bake according to instructions.

Drinks:
Watermelon and Cucumber Spritzer:
Take cut up watermelon
Cut up Cucumbers
Blend with Spring Water and Lime juice
Serve with alcohol of tequila or vodka in shot glasses on the side, so guests can pour in their own alcohol if needed.
Serve in Mason Jars with Handles.

This is a great way to end summer and to celebrate friends.
